Crispy Chicken Adobo Flakes

If you have left-over Chicken Adobo from yesterday, try this quick Filipino recipe of Crispy Chicken Adobo Flakes!

Crispy Chicken Adobo Flakes is one of the many Filipino recipes that you can make for breakfast. All you need is the left over chicken you have from last night’s Chicken Adobo.

Recipe Time:

Time for Preparation = 15 minutes
Time for Cooking = 20minutes

Ingredients:

Leftover Chicken Adobo
1/2 cup cooking oil 
Rice (1 cup per serving) 
Liquid Seasoning (see instructions below)

Instructions:

  1. Manually shred your leftover Chicken Adobo into small flakes. Aim to get about one-inch flakes. The smaller and thinner the torn-off flakes, the better.
  2. Heat the cooking oil in a pan (high heat). Deep fry the small chicken strips. For this Filipino recipe, you don’t need a lot of oil even if you’re deep-frying because the chicken flakes are small anyway. Fry until teh chicken strips are crispy.
  3. Drain the flakes. Place about 1/4 cup of the Crispy Chicken Adobo Strips on top of one cup of rice – this makes one serving.
  4. Pour about a teaspoon of liquid seasoning* (see picture below) on the rice, or serve on the side. For breakfast, you may serve Crispy Chicken Adobo Flakes with eggs served sunny side up and atsara.

*Liquid seasoning in the Philippines is marketed as Maggi Savor or Knorr Liquid Seasoning. It tastes like soy sauce but is less salty and much tastier. Its ingredients include iodized salt, sugar, biologically hydrolyzed wheat protein, and MSG. Liquid seasoning is a common ingredient in many Filipino recipes and is often used as a dip or sauce in the Philippines. And no, we are in no way affiliated to or profiting from any increase in sales of Knorr Liquid Seasoning or Maggi Savor – just in case you were wondering.

Chicken Adobo

Chicken Adobo is a Filipino recipe you will find in most dining tables in the Philippines. This Chicken Adobo recipe is easy and quick to prepare; it also offers a unique way of preparing chicken in your own kitchen the Filipino way.

Chicken Adobo is chicken served in a rich, salty to sour sauce. This dish is great with plain or fried rice.

Recipe Time:

Ingredients:

1 chicken, rinsed and cut into pieces
1/4 cup soy sauce
1 cup water
2 cloves garlic, crushed
1/4 cup white vinegar
1/4 tsp whole black pepper
2 slices ginger (optional)
1 bay leaf (optional)
1 spring onion (optional)

Instructions:

  1. Mix the soy sauce, vinegar, water, garlic, and black pepper. You may add ginger and/ or 1 bay leaf (we Filipinos actually prefer our Chicken Adobo in different ways). Note: most recipes you see online don’t have water in their ingredients, which is a big giveaway that the recipe isn’t 100% Filipino.
  2. Put the above mixture in a pot, together with the cut chicken pieces. Cook at medium fire until the chicken is well done. The water in the mixture helps ensure that your chicken is cooked properly; however, after the chicken is ready, it’s time to get rid of the extra water. So, simmer until there is about a little more than a cup of the mixture left.
  3. Cool and serve. You may garnish with cut spring onions (see picture above).
