Pork Adobo

Pork Adobo, pretty much like Chicken Adobo, is a Filipino recipe you will find in most dining tables in the Philippines. This Pork Adobo recipe is easy and quick to prepare; it also offers a unique way of preparing pork in your own kitchen the Filipino way.

Pork Adobo is pork served in a rich, salty-sour sauce. This dish is great with plain or fried rice.

Recipe Time:

Time for Preparation = 15 minutes 
Time for Cooking = 40 minutes

Ingredients:

1/2 kilo pork, cut into cubes or matchbox-sized slices
1/4 cup soy sauce 
2 cups water
2 cloves garlic, crushed 
1/4 cup white vinegar 
1/4 tsp whole black pepper 
2 slices ginger (optional) 
1 bay leaf (optional) 
1 spring onion (optional)

Instructions:

  1. Mix the soy sauce, vinegar, water, garlic, and black pepper. You may add ginger and/ or 1 bay leaf (we Filipinos actually prefer our Pork Adobo in different ways). Note: most recipes you see online don’t have water in their ingredients, which is a big giveaway that the recipe isn’t 100% Filipino.
  2. Put the above mixture in a pot, together with the cut chicken pieces. Cook at medium fire until the chicken is well done. The water in the mixture helps ensure that your pork is cooked properly; however, after the pork is ready, it’s time to get rid of the extra water. So, simmer until there is about a little more than a cup of the mixture left.
  3. Cool and serve. You may garnish with cut spring onions (see picture above).
